Simple Sponge


Ingredients:
  • 4 eggs, seperated
  • 3/4 cup sugar
  • 1 cup Lighthouse Cake, Biscuit and Pastry Flour Self Raising
  • 1 teaspoon butter, melted
  • 2 tablespoons boiling water
  • Vanilla essence (optional)
Method:
  1. Beat egg whites until stiff. Add yolks and beat again.
  2. Slowly add sugar and beat into mix until dissolved.
  3. Fold in sifted flour and lastly add butter and water, add a few drops of vanilla essence if desired.
  4. Bake in two sanwhich tins for 20 minutes in an oven at 180c (160c fan forced)
  5. Cool on a rack and then sandwhich together with whipped cream and jam top with more cream and a sprinkle of cocoa or fruit.
