Simple Sponge
Ingredients:
- 4 eggs, seperated
- 3/4 cup sugar
- 1 cup Lighthouse Cake, Biscuit and Pastry Flour Self Raising
- 1 teaspoon butter, melted
- 2 tablespoons boiling water
- Vanilla essence (optional)
Method:
- Beat egg whites until stiff. Add yolks and beat again.
- Slowly add sugar and beat into mix until dissolved.
- Fold in sifted flour and lastly add butter and water, add a few drops of vanilla essence if desired.
- Bake in two sanwhich tins for 20 minutes in an oven at 180c (160c fan forced)
- Cool on a rack and then sandwhich together with whipped cream and jam top with more cream and a sprinkle of cocoa or fruit.
