Tomato and Basil Bruschetta


Ingredients:
  • 4 slices of crusty Italian bread
  • 2 small cloves of garlic
  • Dandargan Fruity Extra Virgin Olive Oil
  • 4 Roma tomatos
  • Medium bunch of fresh basil, chopped roughly
  • 2 tbsp Anchor Margaret River Balsamic Vinegar
  • Rock salt, ground
  • Cracked pepper
Method:
  1. Rub one of the garlic cloves onto the bread slices abd drizzle on olive oil. Bake in a very hot oven for 2-3 minutes each side until golden brown or use a grill on highest setting.
  2. Chop tomatos and second garlic clove and mix in a bowl with basil and balsamic vinegar.
  3. Spoon tomato and basil mix onto slices of bread and top with salt and pepper.
