Shortbread Biscuits


Ingredients:
  • 135g butter
  • 60g caster sugar
  • 160g Anchor Lighthouse Plain Flour
  • 20g Anchor Lighthouse Self Raising Flour
  • 60g ground rice
  • Makes 24 cookies
Method:
  1. Cream butter and sugar
  2. In a large bowl, sift flour and ground rice together.
  3. Combine butter and sugar mixture with flour and ground rice until well mixed.
  4. Roll out 12mm thickness and use cookie cutters to cut out shapes.
  5. Sprinkle on sugar, and bake in the oven at 180C or 160C fan forced for 12-15 minutes or until golden brown.
