Shortbread Biscuits
Ingredients:
- 135g butter
- 60g caster sugar
- 160g Anchor Lighthouse Plain Flour
- 20g Anchor Lighthouse Self Raising Flour
- 60g ground rice
- Makes 24 cookies
Method:
- Cream butter and sugar
- In a large bowl, sift flour and ground rice together.
- Combine butter and sugar mixture with flour and ground rice until well mixed.
- Roll out 12mm thickness and use cookie cutters to cut out shapes.
- Sprinkle on sugar, and bake in the oven at 180C or 160C fan forced for 12-15 minutes or until golden brown.
