Scallops with Verjuice reduction


Ingredients:
  • A dozen scallops
  • 1/2 cup (250ml) Anchor Verjuice
  • 50g butter
  • 1 spring onion
  • Sea salt & cracked pepper
  • 1tbsp fresh parsly chopped
Method:
  1. Melt butter in a saucepan and add spring onion. When butter starts to brown add verjuice. Reducre sauce until it thickens and coats the back of the spoon.
  2. Meanwhile, heat a frypan and lightly oil. Sear the scallops on each side until they are golden brown.
  3. Place scallops on a serving plate, add parsley to sauce and drizzle verjuice reduction over scallop.
