Scallops with Verjuice reduction
Ingredients:
- A dozen scallops
- 1/2 cup (250ml) Anchor Verjuice
- 50g butter
- 1 spring onion
- Sea salt & cracked pepper
- 1tbsp fresh parsly chopped
Method:
- Melt butter in a saucepan and add spring onion. When butter starts to brown add verjuice. Reducre sauce until it thickens and coats the back of the spoon.
- Meanwhile, heat a frypan and lightly oil. Sear the scallops on each side until they are golden brown.
- Place scallops on a serving plate, add parsley to sauce and drizzle verjuice reduction over scallop.
