Pickled Herring


Ingredients:
  • 6 fillets of salt herring
  • 4 large onions, thinly sliced
  • 1 cup Anchor white vinegar
  • 1/2 cup water
  • 2 tablespoons sugar
  • 1 tablespoon Spencers pickling spice
  • 4 Spencer bay leaves
Method:
  1. Wash the herring fillets well under running cold water.
  2. In a glass or crockery bowl, place the fillets in the bowl and cover with cold water. Refrigerate for 10-12 hours.
  3. Rinse the fillets again and place them in a glass casserole dish. Cover the herring with the sliced onions, making layers if necessary.
  4. Now make tge marinade. In a saucepan, combine the vinegar, water, sugar and pickling spice and bay leaves. Bring to boil and reduce to a simmer. Cook for 3-5 minutes until the sugar has dissolved. Cool slighlty and pour over the herring fillets.
  5. Cover and place in a cool spot or refrigerate and marinate for 2 to 3 days before serving.
  6. Remove the herring fillets from the marinade and slice into bite size pieces. Place the pieces in a serving bowl. Remove the bay leaves from the marinade and mix the marinade and the onions with the herring fillets and serve.
