Overnight Fruit Pudding


Ingredients:
  • 2 cups Lighthouse Plain Flour
  • 1 cup sugar
  • 1 cup sultanas
  • 1 cup currants
  • 1 teaspoon cinnamon
  • 1 cup hot water
  • 1 tablespoon butter
  • 1 cup cold water
  • 2 level teaspoons soda
Method:
  1. Melt butter in hot water and dissolve soda in cold water.
  2. Add flour, sugar, fruit and cinnamon into a large mixing bowl.
  3. Add liquids and mix well.
  4. Pour into pudding steamer, cover with lid and leave overnight.
  5. Place in a steamer or large pot filled with water and steam for 3 hours.
  6. Serve hot pudding with pouring custard or cream or serve cold with butter.
