Overnight Fruit Pudding
Ingredients:
- 2 cups Lighthouse Plain Flour
- 1 cup sugar
- 1 cup sultanas
- 1 cup currants
- 1 teaspoon cinnamon
- 1 cup hot water
- 1 tablespoon butter
- 1 cup cold water
- 2 level teaspoons soda
Method:
- Melt butter in hot water and dissolve soda in cold water.
- Add flour, sugar, fruit and cinnamon into a large mixing bowl.
- Add liquids and mix well.
- Pour into pudding steamer, cover with lid and leave overnight.
- Place in a steamer or large pot filled with water and steam for 3 hours.
- Serve hot pudding with pouring custard or cream or serve cold with butter.
