Orange Tea Cake


Ingredients:
  • 1 tablespoon butter
  • 1/2 cup caster sugar
  • 1 egg beaten
  • Rind and juice of 1 large orange
  • 1 cup Lion Self Raising flour, sifted
Method:
  1. Cream butter and sugar.
  2. Add the egg and beat again.
  3. Add the rind and juice of the orange.
  4. Stir in the sifted self raising flour.
  5. Pour into a greased 20cm baking tin.
  6. Bake for 20 minutes or until an inserted skewer comes out clean.
