Orange Cake
Ingredients:
- 1 cup caster sugar
- 125g butter or margarine
- Rind and juice of 1 orange
- 2 eggs
- 2 cups Lighthouse Self Raising flour
- Pinch salt
- Teaspoon of milk
Method:
- Cream, butter, sugar and rind until light and creamy.
- Beat the eggs lightly and sift the flour and salt.
- Add the eggs and orange juice slowly and alternatively with the flour and salt.
- If necessary add a little milk to give a soft dropping consistency, and then beat well for 2 minutes.
- Place in a greased and floured large cake tin and bake in a moderate oven 180c (160c fan forced) for 40-45 minutes or until an inserted skewer comes out clean.
