Orange Cake


Ingredients:
  • 1 cup caster sugar
  • 125g butter or margarine
  • Rind and juice of 1 orange
  • 2 eggs
  • 2 cups Lighthouse Self Raising flour
  • Pinch salt
  • Teaspoon of milk
Method:
  1. Cream, butter, sugar and rind until light and creamy.
  2. Beat the eggs lightly and sift the flour and salt.
  3. Add the eggs and orange juice slowly and alternatively with the flour and salt.
  4. If necessary add a little milk to give a soft dropping consistency, and then beat well for 2 minutes.
  5. Place in a greased and floured large cake tin and bake in a moderate oven 180c (160c fan forced) for 40-45 minutes or until an inserted skewer comes out clean.
