Lemon Shortbread Cookies


Ingredients:
  • 1/2 cup caster sugar
  • 1/2 cup butter
  • Rind of 1 lemon
  • 1 cup of Snowflake Plain flour (if you are in SA look for Lion Plain flour)
  • Pinch salt
  • Eggs & sugar for glazing
Method:
  1. Cream butter and sugar with the lemon rind until light and creamy.
  2. Sift the flour and salt and work into the creamed mixture until it forms a soft dough.
  3. It is important to the ingredients as cool as possible and it may be necessary to place the creamed mixture in the refrigerator for a short while before mixing in the flour.
  4. Roll the mixture into little balls, place on a greased tray and the press with a fork.
  5. Glaze with egg and sprinkle with sugar.
  6. Bake in an oven at 180c or 160c fan forced for 12-15 minutes or until golden brown.
  7. Allow the cookies to cool before removing from tray.
