Lemon Shortbread Cookies
Ingredients:
- 1/2 cup caster sugar
- 1/2 cup butter
- Rind of 1 lemon
- 1 cup of Snowflake Plain flour (if you are in SA look for Lion Plain flour)
- Pinch salt
- Eggs & sugar for glazing
Method:
- Cream butter and sugar with the lemon rind until light and creamy.
- Sift the flour and salt and work into the creamed mixture until it forms a soft dough.
- It is important to the ingredients as cool as possible and it may be necessary to place the creamed mixture in the refrigerator for a short while before mixing in the flour.
- Roll the mixture into little balls, place on a greased tray and the press with a fork.
- Glaze with egg and sprinkle with sugar.
- Bake in an oven at 180c or 160c fan forced for 12-15 minutes or until golden brown.
- Allow the cookies to cool before removing from tray.
