Caesars Twist
Ingredients:
- 4 slices of crusty Italian bread
- 1 garlic clove, crushed
- 30g, butter melted
- 8 slice of prosciutto
- 1 cos lettuce, washed and chopped
- 8 anchovy fillets
- 150g Parmesan cheese, shaved
- 1/2 cup Anchor Italian red wine vinaigrette
Method:
- To make croutons - Preheat oven to 220c or 200c fan forced. Cut bread into 1cm cubes and coat with butter and garlic. Place in hot oven for 5-8 minutes or until golden and crunchy. Set aside
- Fry prosciutto in a hot frypan until crispy and browned.
- To assemble salad, in a large bowl add lettuce leaves, anchovy fillets, parmesan cheese and prosciutto
- Pour in vinaigrette and mix until all ingredients are well coated
- Top salad with boiled eggs and croutons
